Grande Rice Bran Oil

Have you heard about Rice Bran Oil as probably the healthiest oil of all?  I couldn't believe at first, but when experts hail it to be the most balanced and versatile oil in the market, I started doing my research on it.  Here is what I found:

Rice Bran Oil has the right combination of saturated, monounsaturated and polyunsaturated fats as recommended by the American Heart Association and the World Health Organization.  Now that says a lot about an oil, it can even improve cholesterol levels and prevent cardiovascular diseases. 

Rice Bran Oil is extracted from the middle layer of the husk and the grain wherein it is rich in natural antioxidants such as Vitamin E, phytosterols and Gamma-oryzanol.  Using the finest extraction and physical refinement process of Grande, it was able to produce one of the healthiest oils in the world that you can use to fry, sear and sauté without worrying that what you're digesting is too oily and unhealthy for you.  Grande Rice Bran Oil is labeled as "The Olive Oil of the East", and as such, you can even use it in salads as a healthy dressing and a base for baking.

During the recent launch of Grande Rice Bran Oil, Chef Michael Miko Aspiras also shared with us recipes of a 3-course meal that we can try at home.  The 3-course meal consisted of a Sesame Tuna Aburi Tataki Salad for appetizer, Pork and Beans for main course and Pili Donuts and Cream for dessert.  I have also shared his recipes on this blog post so that you can try them yourself at home, as you try Grande Rice Bran Oil too.


Sesame Tuna Aburi Tataki Salad
Appetizer


15 servings of approximately 65g per serving

Sesame mayonnaise ingredients:
4 large egg yolks
6 teaspoons fresh lemon juice
4 teaspoons cane vinegar
1 teaspoon Dijon mustard
2 teaspoon of salt to taste
1/2 teaspoon freshly cracked pepper
3 cups Grande Rice Bran Oil
1/2 cup roasted sesame seeds
  • Place sesame seeds in the blender and blend until finely ground.
  • Combine egg yolk, lemon juice, vinegar, mustard, sesame powder and half of the salt in a blender, whip until lightly beaten for about 30 seconds.
  • Add the oil to the egg yolk mixture in a streaming manner approximately for 10 minutes, until mixture is thick like mayonnaise
Tataki dressing ingredients:
1/4 part of the mayonnaise mixture (above)
1/4 cup rice wine vinegar
1/8 cup water (distilled)
1 teaspoon grated ginger
2 tablespoons Grande Rice Bran Oil
salt and pepper to taste
  • Mix all together in a blender until emulsified.
Tuna:
2 pcs. 175g tuna loin, lightly seared in Grande Rice Bran Oil

Salad ingredients:
400g mixed greens
100g red beets, peeled and chopped into cubes
40 pcs. cherry tomatoes (halved)
fried shallots
fried basil
furikake (optional)
  • Place mayonnaise in a squeeze bottle
  • Slice tuna thinly, drizzle with mayonnaise.  Torch the mayonnaise, set aside
  • Toss salad greens, beets, tomatoes on dressing
  • Place dressed salad on plate
  • Place torched tuna beside it
  • Sprinkle with more dressing, fried shallots, basil and furikake
Pork and Beans
Main Course


15 servings of approximately 100g per serving

Ingredients and recipe for pork:
500g pork belly roll
lemongrass stalks, crushed
  • Roll pork belly with lemongrass skewered inside, use a twine.
  • Brine for at least 8 hours in 3 liters of water, 5 tablespoons rock salt, 10 pcs. crushed black peppercorns, 6 pcs. star anise, 4 pcs. bay leaf, ginger (to taste), 4 crushed garlic cloves, 2 teaspoons cinnamon powder, 2 teaspoons mace powder, 3 teaspoons fish sauce
  • After brining, drain excess water by placing the belly roll on a cooling rack, let the excess water drip for at least 30 minutes
  • Roast in 170 degrees Celsius oven for 3 hours
  • Cool it down, remove the lemongrass, slice
  • Deep fry in Grande Rice Bran Oil until skin is crisp, drain excess oil
Ingredients and recipe for beans:
165g white beans (boiled)
145g marbled potatoes (boiled, drained)
100g chorizo (sliced into thick discs)

Ingredients and recipe for dressing:
45g coriander
45g basil
25g parsley
1/6 teaspoon red chilies
1 1/2 tablespoon lemon or lime juice
65g sundried tomato (brined in oil)
2 tablespoons Grande Rice Bran Oil
  • Blend all ingredients together in a food processor.
  • Salt and pepper to taste.
  • Deep fry the chorizo slices, set aside.
  • Deep fry the potatoes, smash it, mix in white beans and chorizo, toss in dressing.
  • Serve on the side of roast pork, serve with lemon slice and sprinkle with some maldon salt
Pili Donuts and Cream
Dessert


15 servings of approximately 78g per serving

Ingredients and recipe for donuts:
45 pcs. brioche donut balls
1 liter Grande Rice Bran Oil for deep frying
  • Caster sugar for dusting
  • Fry donuts, roll onto caster sugar lightly

Ingredients and recipe for pili butter glaze:
400g glazed pili
200g Grande Rice Bran Oil
1/4 teaspoon salt
150g muscovado sugar
  • Blend all ingredients together until smooth like runny peanut butter
  • Pour onto donuts
  • Serve with cream cheese ice cream
  • Dust with wild raspberry powder
  • Dress with flowers and micro greens
